Ramzan Ki Khas Soghat: Don’t Miss Out on These!

Finally the most awaited month of the year is here, Ramadan. Let’s be honest, we all have different reasons to get excited over during Ramzan. Some of us are excited about the upcoming iftar parties and some are excited about the Eid shopping, while the food lovers out there are looking forward to have the special Ramzan ki soghat.

There are a few typical dishes that you see everywhere during the month of Ramadan such as, pakoray, samosas, chaat and dahi barhay. It is hard to resist the savory smell of frying pakoras and kachoris wafting from the huge woks of bubbling oil as you pass by the stalls selling Ramadan favorites. You might end up gaining a pound or two but it’s okay since you don’t really get to eat much of these things all around the year. Here are a few recipes that you really need to know if you plan on inviting a few friends over for sehri or iftari.

1. Khajla

One of the traditional sehri food items, khajla is really the ronak of Ramadan. It’s pretty easy to prepare at home if you are enough of a health conscious person and want avoid those oil dripping khajlas in the market.

Ingredients:

  • Flour                        1 ½ kg
  • Salt                           2 tsp.

Ingredients for batter:

  • Corn flour              4 tsp.
  • Flour                       2 tsp.
  • Ghee                        2 cups

Method:

  1. Make dough, apply oil and leave if for 15 minutes.
  2. Make a batter with flour, corn flour and ghee.
  3. Divide the dough into two parts and roll it. Add the batter between both the dough parts and roll it.
  4. Leave it for 15 minutes.
  5. Cut the rolled dough into several pieces.
  6. Turn the slightly closed side of the piece downwards. Close the end by pressing it towards the center. Keep the other end open by applying ghee.
  7. Heat ghee in a wok.
  8. When the ghee gets hot, roll the pieces keeping the open end upwards.
  9. Add ghee with a spoon on the top to make it fluffy.
  10. Take them out and strain them as soon as they become golden.
  11. Heat milk and add cardamom powder and sugar in it.
  12. Crush the khajla in it and top with pistachios, cashews and almonds.

2. Kachori

Another mouthwatering and delicious Ramadan ki soghat is Kachori. Some people like plain kachoris while some prefer it with different kind of stuffings. Make perfect puffed, crisp and flaky kachoris this Ramadan at home.

Ingredients for dough:

  • Plain flour                 ½ kilo
  • Salt                              ½ tsp.
  • Ghee(melted)            3 tbsp.

Method:

  1. Mix flour ghee and salt to make dough with lukewarm water.
  2. Set aside for 30 mins.
  3. Make little balls after dividing it into several portions.

Filling:

Kachori can be stuffed with literally anything and it all depends on you. You can stuff it with potatoes, cheese, chicken, vegetables, noodles, or how about moong daal? Yumm!
Minced meat is the most common stuffing that is made at homes. Cook the keema first before you fill the kachori.

Ingredients:

  • Chicken/ meat (minced)    250 grams
  • Onion (chopped)                1 tbsp.
  • Ginger garlic paste            1 tbsp.
  • Red chili powder                ½ tsp.
  • Salt: as per taste
  • Turmeric powder               ½ tsp.
  • Garam masala (powder)    ½ tsp.
  • Oil                                           1 tbsp.
  • Tomatoes: blended or pureed ( 1 tbsp.)

Method:

  1. Sauté onion in oil and then add ginger garlic paste and mince. Fry.
  2. Add tomato puree, salt, red chili powder, turmeric powder and then mix well.
  3. Let it cook over low flame till the water dries and the mince is cooked. Keep the lid covered.
  4. Add garam masala, mix and the turn off the flame.
  5. Let it cool.
  6. Roll out the dough into a ball and flatten them. Add the stuffing between two rolls and then join the corners all around the circular chapatti like dough.
  7. Deep fry these kachoris till they become crisp.
  8. Serve with sauce of your own choice!

3. Chana Chaat

You may come across many chana chaat recipes during Ramadan, but this spicy and savory chana chaat is going to be the real winner. It is equally yummy and a healthy dish to have at ifatri. Nutritious and oil-free, chana chaat is a delicious treat for your taste buds after a long day of fasting.

Ingredients:

  • Chick peas:        15 ounce boiled
  • Potato:                1 large ( cut into small pieces, boiled and boiled)
  • Coriander:         2 tbsp.
  • Green Chili:       1
  • Chaat masala:   1 tbsp.
  • Imli chutney:     3 tbsp.
  • Onion:                 ¼ of a medium sized onion
  • Tomato:              1 medium
  • Salt:                     as per taste

Method:

  1. Mix all the ingredients including the spices.  You can also add yogurt.
  2. Serve at room temperature.

4. Bread Rolls

Oozing with amazing savory flavor and great to the taste buds, these cheesy bread rolls are pretty easy to make and are a delectable add up to the Ramzan ki soghat.

Ingredients:

  • Bread slices:                     as many as you like
  • Cheese slices                    1 slice per four bread slices.
  • Red chili powder             1 tsp.
  • Salt                                     ½ tsp.
  • Black pepper                    1 tsp.
  • Milk                                    2 tbsp.
  • Eggs                                    2
  • Flour                                  1 cup
  • Breadcrumbs                   2 cups

Method:

  1. Roll out the bread slices and flatten them.
  2. Cut the cheese slices in to 4 long vertical pieces.
  3. Put one cheese slice on one bread slice.
  4. Roll the bread.
  5. A all the spices and milk to the eggs and beat them.
  6. Dip the roll in the egg mixture.
  7. Close the end of the roll and the spread flour all over it.
  8. Again dip the roll in the egg mixture.
  9. Now spread breadcrumbs all over the roll and deep fry it till it becomes golden brown.
  10. Serve it with an sauce of your choice.
