Grilled Chicken Salad

This grilled chicken salad is a healthy and filling option for lunch or dinner.  Switch up the vegetables based on what is available in season.

Ingredients:

For the Grilled Chicken

  • 2 medium skinless boneless chicken breasts, pounded flat
  • 1 tablespoon olive oil, plus more for grilling
  • 1⁄2 teaspoon Italian herbs
  • Salt, to taste
  • Black pepper, to taste
  • ½ teaspoon red chilli flakes

For the Dressing:

  • ¼ cup olive oil
  • 2 tablespoons vinegar
  • 2 tablespoons lemon juice
  • Juice of ½ lemon
  • ½ teaspoon mixed Italian herbs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon mustard paste

For the Salad:

  • 4 – 5 lettuce leaves, sliced
  • 2 cups ice-berg lettuce, chopped
  • 3 tomatoes, chopped
  • 2 cucumber, chopped

Method:

  1. Place the chicken breasts in a bowl. Add the marinade ingredients and toss together.
  2. Let sit for 15 – 20 minutes to marinate properly.
  3. Heat oil in a grill pan. Place the chicken breasts and grill chicken for 4 – 5 minutes each side until cooked through. Remove from pan, and let cool before slicing.
  4. Combine all the ingredients for the dressing in a small bowl. Whisk till mixed and set aside.
  5. Take a large bowl and add chopped lettuce leaves, ice-berg, tomatoes and cucumber.
  6. Drizzle about 1 – 2 tablespoon of the dressing and toss to combine.
  7. Taste and add more dressing if preferred.
  8. Top with sliced chicken and mix through.

Bhindi Ki Sazbi

This Bhindi Ki Sazbi with tomatoes and onions make for a delicious vegetarian dinner.

How to Make Bhindi Ki Sazbi

Ingredients:

  • 4 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 2 teaspoons ginger garlic paste
  • 2 green chilli, sliced
  • 2 tomatoes, chopped
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 teaspoon coriander powder
  • Salt, to taste
  • ½ kg ladyfinger/okra/bhindi
  • Water, as required
  • 1 teaspoon lemon juice
  • Coriander, for garnish

Method:

  1. Wash the ladyfinger or bhindi well. Let it drain in a colander, and dry out completely.
  2. Cut the ends of the ladyfinger and then slice into rounds. Don’t wash the ladyfinger after it has been cut.
  3. Heat the oil in a pot on medium heat.
  4. Add cumin seeds, and cook for a few seconds till they splutter.
  5. Add ginger garlic paste, followed by green chilli and tomatoes. Cook till tomatoes are soft.
  6. Add turmeric, red chilli powder, coriander powder and salt. Cook for 1-2 minutes and then add ladyfinger.
  7. Mix together and cook for 2-3 minutes.
  8. Add water, and turn heat to low. Cover with a lid, and then cook on low heat till the ladyfinger is cooked through.
  9. Add lemon juice and a handful of chopped coriander. Mix and serve hot with roti.

Chicken Malai Boti

How to Make Chicken Malai Boti

Ingredients:

  • ½ kg boneless chicken, cut into cubes
  • 1 tablespoon ginger garlic paste
  • ½ teaspoon garam masala powder
  • 1 teaspoon salt
  • 1 teaspoon white cumin
  • 2 tablespoons yogurt
  • 1 teaspoon coriander powder
  • 1 teaspoon red chilli flakes
  • 2 tablespoons cream
  • 2 tablespoons lemon juice
  • 1 tablespoon raw papaya paste
  • 3 – 4 green chillies, ground into paste
  • Oil, for grilling

Method:

  1. Place chicken cubes in a bowl. Add ginger garlic paste, garam masala powder, salt, white cumin seeds, yoghurt, coriander powder, red chilli flakes, cream, lemon juice, raw papaya pate and green chillies. Mix together and let it marinate for 2 hours at least.
  2. Once the chicken has been marinated, put the chicken cubes on skewers and set aside.
  3. Heat oil in a frying pan or grill pan or barbeque.
  4. Cook/grill the chicken cubes till cooked through and tender.
  5. Turn the chicken skewers around on sides, brushing more oil if required.
  6. Serve hot with salad and chutney on the side.

Creamy Fruit Chaat

Creamy fruit chaat is the basic Pakistani fruit salad with a twist. Seasonal fresh fruits are drizzled with a creamy dressing made with condensed milk and cream sprinkled with dried fresh fruits for garnish. Make sure it’s served cold!

Ingredients:

  • ½ cup cream
  • ¾ cup condensed milk
  • 2 apples, chopped
  • 2 mangoes, chopped
  • 2 bananas, sliced
  • 2 peaches, chopped
  • ½ cup fruit cocktail
  • Chaat masala, to taste (optional)
  • ½ cup cherries
  • Sliced dried fruit, for garnish

Method:

  1. Take a small bowl and add condensed milk and cream. Mix with a whisk and set aside.
  2. Wash and cut the apples in cubes. Sprinkle lemon juice on apples so that they don’t brown. (Apples can be peeled or unpeeled, based on personal preference.)
  3. Wash, peel and cut the mangoes in cubes. Set aside.
  4. Peel and slice the bananas. Set aside.
  5. Wash, peel and cut the peaches in cubes. Set aside.
  6. Put all the cut up fruit in a large glass bowl. Add canned fruit cocktail followed by the creamy dressing. Mix together and then add sliced dried fruit with cherries for garnish.
  7. Sprinkle with chaat masala (optional) and serve cold.
  8. Add lemon juice, lemon zest, sugar and chaat masala. Mix well, and adjust spices accordingly.
  9. Garnish with cherries and more chaat masala on top.
