This shakarkandi ki chaat or sweet potato chaat, is a great treat to whip up for tea or even as a late night snack. And it offers a variation to the regular, baked way of preparing shakarkandi.

Ingredients:

2 shakarkandi

½ cup boiled chickpeas

2 tomatoes, chopped

1 onion, finely diced

2 tbsp. chopped mint leaves

2 tbsp. chopped coriander leaves

Salt, to taste

1 tbsp. lemon juice

For green chutney:

¼ cup mint leaves

¼ cup coriander leaves

2 green chilies

Salt, to taste

For tamarind chutney:

½ cup tamarind pulp

2 tbsp. brown sugar

1 tsp. red chili flakes

Salt, to taste

1 tsp. cumin powder

Serve with:

Spicy chips or papri

Chaat masala

Method:

Boil the shakarkandi until tender. Place in cold water to make removing the skins easier.

Dice the shakarkandi into bite-sized chunks.

Make the green chutney: Blend all the ingredients until a smooth paste is formed. Add one tablespoon of water at a time until you reach the desired consistency.

Make the tamarind chutney: Whisk together all the ingredients until the sugar is dissolved. Some people prefer to cook the chutney, so you can add ½ cup of water and cook on a low heat until you reach the desired consistency.

We personally prefer the khataas that comes with the undiluted tamarind.

In a large bowl, add the boiled shakarkandi, chickpeas, tomatoes, onions, coriander leaves, mint leaves, salt and lemon juice. Toss well.

Top with 1-2 tbsp. of green chutney and 1-2 tbsp. of tamarind chutney.

You can reserve the remainders of the chutney in your fridge to serve with pakoras or dahi baras.

Top with chaat masala and spicy chips/papri.

We love pasta but it isn’t always the healthiest option. However, if you choose a whole wheat variety and skip the white sauce then you can enjoy a delicious bowl of pasta without the added guilt!

Follow our healthy pasta recipe and trust us, no one will miss the more fattening variety. And you’ll be getting constant requests for the recipe.

It’s also a great option if you want to throw an impromptu party

Whole Wheat Penne Arabiatta

Serves: 4

Prep time: 20 minutes

Cook time: 30-40 minutes

Ingredients:

2 cups whole wheat penne pasta

2 tbsp. olive oil

1 onion, diced

3 cloves garlic, finely minced

¾ cup mushrooms, fresh or tinned (either is fine)

1 tsp. salt

1 tsp. freshly ground black pepper

1 heaping tsp. red chili flakes

2 tsp. mixed Italian herbs

2 tins crushed tomatoes (you can use whole tomatoes too)

1 chicken stock cube

A handful of fresh basil leaves (optional)

¼ cup Mozzarella cheese (optional)

10-12 black olives, halved

Parmesan cheese for garnishing (optional)

Method:

  • Boil whole wheat pasta until al dente. Drain and rinse well.
  • Place a large sauce pan or degchi on medium heat and add olive oil, onions and garlic. Sauté until the onions are translucent and slightly golden.
  • Add mushrooms and cook for one minute.
  • Add salt, pepper, herbs and red chili flakes. Stir well.
  • Now add 2 tins of crushed tomatoes, a few basil leaves and the stock cube. Stir and set the heat to low. Simmer for at least 20 mins, stirring occasionally in between. The goal is to allow the water to evaporate from the tomatoes so you end up with a rich tomato sauce.
  • Add the whole wheat penne to the sauce. Stir through.
  • Add mozzarella cheese, sliced olives and some extra basil leaves to finish off.
  • Serve and enjoy!

Once you have made that cut-throat decision of eating healthy, you may find yourself suddenly struggling to put together meals that keep you motivated and satiated. A good grilled chicken recipe is an absolute essential when making the switch over to clean eating.

  • Grilled chicken is extremely versatile to use: salads, sandwiches, whole wheat pasta, whole wheat wraps, etc

Even though there is a wide variety of marinades you can use for skinless, boneless chicken breasts- (tikka masala, spicy Cajun), our favorite has to be this herby, slightly spicy version. Give it a try and trust us, it will become a family staple.


Fool Proof Grilled Chicken

Ingredients:

2 Chicken Breast Fillets

1 tsp Salt

½ tsp Black Pepper

1 tsp Dijon Mustard

½ tsp Red Chili Flakes

1 tsp Mixed Italian Herbs

¼ tsp Dried Rosemary

1 tsp Ginger Garlic Paste

Method:

Slightly flatten chicken breasts. This breaks the muscle tendons in the fillet, resulting in a tender final product.

Marinate chicken breasts with all the ingredients. Make sure you rub both sides of the fillet, making sure that the herbs are evenly covering the chicken.

Let marinate for at least 1 hour.

Heat a grill pan and drizzle with olive oil. (You may pan-fry the fillets if you like, just add a touch of olive oil to your frying pan)

Once the pan is nice and hot, place the breast fillets on the pan. Make sure that you do not flip the chicken before it develops a nice sear, this will cause the chicken to stick to the pan. Give it approximately 6 minutes for each side to cook through.

Let the breast fillets rest for 3 minutes before slicing.

Serve with sautéed vegetables, pasta, potatoes, or absolutely anything you like.

Beef Burger paka dey

Make a delicious beef burger in the comfort of your own home. This particular recipe has caramelized onions to add a burst of flavor. Serve with French fries, of course!

Ingredients:

For Beef Burger:

  • 500 gram beef mince
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 slices cheese
  • Oil, for grilling

For Onion Topping:

  • 2 tablespoons oil
  • 1 onion, thinly sliced
  • 1 green pepper, sliced
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon ground black pepper
  • ¼ tsp Worcestershire sauce
  • 2 teaspoons brown sugar

Assembling the Beef Burger:

  • 4 burger buns, toasted
  • 1 tomato, sliced
  • 4 lettuce leaves
  • Mayonnaise

Method:

  1. To prepare the caramelized onion topping. Take a large frying pan and heat oil. Add onion, capsicum and seasonings along with Worcestershire sauce and brown sugar. Cook for about 6 – 8 minutes till the vegetables are soft and caramelized. Remove and set aside.
  2. In a medium mixing bowl, gently mix the beef, salt and pepper. Form beef patties, and set aside. In this amount of meat, 4 large beef patties can be made or 6 – 7 small beef patties can be made.
  3. Heat a grill pan or a frying pan and heat oil. Add the burger patties, cooking for about 4 – 5 minutes each side until cooked through. Top the burgers with a slice of cheese. Let the cheese melt (about 30 – 45 seconds) and take off the grill.
  4. Start assembling the burger. Toast off the burger pans in a grill pan or a frying pan. Place the bottom burger on a plate and add mayonnaise, salad leaves, tomatoes and beef patty with cheese.
  5. Top with the caramelized vegetables and the top burger bun. Serve with French fries.

MatarPulao is a simple vegetarian dish that can be eaten on its own or served with delicious Pakistani gravies. Keep a bag of frozen peas in the freezer to make this pulao dish even more quickly.

Ingredients:

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 tablespoon whole spices (cinnamon, green and black cardamom, cloves, black pepper)
  • 1 bay leaf
  • 1 onion, sliced
  • 1 tomato, chopped
  • ¾ cup peas
  • 1 cup basmati rice, soaked
  • 2 – 2 ½ cups water
  • 2 green chilies
  • Salt, to taste

Method:

  1. Wash basmati rice till water runs clear. Soak the rice for about 30 minutes. Drain and set aside.
  2. In the meanwhile, heat oil in a pot.
  3. Add cumin seeds, followed by whole spices and bay leaf. Saute for about a minute till the flavor is released from spices.
  4. Add onion, and cook till light golden and caramelized.
  5. Add tomatoes, and cook for a couple of minutes till the tomatoes are soft.
  6. Add the peas and cook for 2 minutes, and then add the soaked & drained rice.
  7. Stir 2-3 times and then add water.
  8. Bring the water to a boil, and then turn heat to low.
  9. Cover the pot and keep cooking on low heat till the water is absorbed and rice is cooked (about 15 minutes). In case more water is required, add a few more tablespoons of water.
