Chicken Chili

Chicken Chili is a dry-style spicy chinese dish with minimal gravy. It’s made with boneless chicken, onion, capsicum and of course chilis in Chinese seasonings. Best served with fried rice.

Ingredients for Chicken Chili:

  • 400 gram boneless chicken, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon vinegar
  • 1 teaspoon soy sauce
  • 1 egg
  • 2 tablespoons cornflour
  • Oil for frying

For the Gravy:

  • 2 tablespoons oil
  • 2 teaspoons garlic chopped
  • 1/2 teaspoon ginger chopped
  • 3 – 4 green chilies, sliced
  • 1 large onion, cubed
  • 1 capsicum, cubed
  • 1 teaspoon vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon oyster sauce
  • 2 tablespoons honey
  • 1 teaspoon salt
  • ¼ teaspoon white pepper
  • 1/2 cup Water
  • 2 tablespoons corn starch, dissolved
  • 2 tablespoons toasted and crushed peanuts

Method of Chicken Chili:

  1. Place the boneless chicken in a bowl, and add salt, black pepper, vinegar, soy sauce, egg and cornflour. Mix well, and marinate for about 15 minutes.
  2. Heat oil and fry the marinated chicken till crisp and golden. Drain and set aside.

For Gravy:

  1. Heat oil in a pan. Add chopped garlic and ginger and saute for about 2 minutes. Add green chili, followed by capsicum and onion.
  2. Saute for another minute, and add vinegar, soy sauce and oyster sauce. Stir and add honey, salt and white pepper.
  3. Mix and add water.
  4. Bring to a boil, and add cornflour dissolved in water. Once the gravy is thickened, cook for about another minute. Add soya sauce, white pepper and salt and mix well.
  5. Add a cup of water, and then add the fried chicken.
  6. Bring to a boil and cook for about 2-3 minutes.
  7. Add cornflour dissolved in water, and mix till the gravy is thickened.
  8. Top with peanuts, and serve hot with fried rice.
