Chicken Chili
Chicken Chili is a dry-style spicy chinese dish with minimal gravy. It’s made with boneless chicken, onion, capsicum and of course chilis in Chinese seasonings. Best served with fried rice.
Ingredients for Chicken Chili:
- 400 gram boneless chicken, sliced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon vinegar
- 1 teaspoon soy sauce
- 1 egg
- 2 tablespoons cornflour
- Oil for frying
For the Gravy:
- 2 tablespoons oil
- 2 teaspoons garlic chopped
- 1/2 teaspoon ginger chopped
- 3 – 4 green chilies, sliced
- 1 large onion, cubed
- 1 capsicum, cubed
- 1 teaspoon vinegar
- 1 teaspoon soy sauce
- 1 teaspoon oyster sauce
- 2 tablespoons honey
- 1 teaspoon salt
- ¼ teaspoon white pepper
- 1/2 cup Water
- 2 tablespoons corn starch, dissolved
- 2 tablespoons toasted and crushed peanuts
Method of Chicken Chili:
- Place the boneless chicken in a bowl, and add salt, black pepper, vinegar, soy sauce, egg and cornflour. Mix well, and marinate for about 15 minutes.
- Heat oil and fry the marinated chicken till crisp and golden. Drain and set aside.
For Gravy:
- Heat oil in a pan. Add chopped garlic and ginger and saute for about 2 minutes. Add green chili, followed by capsicum and onion.
- Saute for another minute, and add vinegar, soy sauce and oyster sauce. Stir and add honey, salt and white pepper.
- Mix and add water.
- Bring to a boil, and add cornflour dissolved in water. Once the gravy is thickened, cook for about another minute. Add soya sauce, white pepper and salt and mix well.
- Add a cup of water, and then add the fried chicken.
- Bring to a boil and cook for about 2-3 minutes.
- Add cornflour dissolved in water, and mix till the gravy is thickened.
- Top with peanuts, and serve hot with fried rice.
