Bread Pakora
Bread pakora is a popular snack made from bread slices stuffed with spiced mashed potato and then dipped in gramflour (besan) batter. The stuffed bread sandwich is then fried till golden and crispy.
Ingredients:
For the Potato Stuffing
- 250 grams potatoes
- 2 tablespoon coriander, chopped
- 2 tablespoon mint leaves, chopped
- 2 green chilies, sliced
- Salt, to taste
- ¼ teaspoon red chili powder
For the Batter
- 1 cup gramflour (besan)
- ½ teaspoon red chili powder
- ½ teaspoon baking soda
- Water, as required
- 1 loaf of bread
- Oil, for frying
Method:
- Wash, peel and boil the potatoes till they are soft.
- Mash the potatoes and place them in a large bowl.
- Add coriander leaves, mint leaves, green chili, salt, red chili powder and mix together. Check the seasonings and adjust accordingly. Keep aside.
- Prepare the batter by placing the gramflour (besan) in a bowl. Add red chili powder and baking soda. Add water till a thick batter is formed. Keep whisking to ensure that there are no lumps. Set aside.
- Place bread slices on a chopping board or flat surface.
- Take 2 to 3 tablespoons of the potato filling mixture and spread it on the bread slices. Slice it into triangle or rectangle slices.
- Heat oil for deep frying in a large wok.
- Take the halved potato sandwich, and dip it in the batter. Make sure that the sandwich is covered with the batter evenly.
- Fry the bread pakoras on a medium flame till they are crisp and golden brown.
- Serve hot with green chutney or ketchup.
Note: The stuffing for bread pakoras can be changed as per personal preference. Grated cheese or shredded chicken can be used, or even leftover alookabharta can be used as a stuffing.
