  • 2 tablespoon coriander, chopped
  • 2 tablespoon mint leaves, chopped
  • 2 green chilies, sliced
  • Salt, to taste
  • ¼ teaspoon red chili powder

For the Batter

  • 1 cup gramflour (besan)
  • ½ teaspoon red chili powder
  • ½ teaspoon baking soda
  • Water, as required
  • 1 loaf of bread
  • Oil, for frying

Method:

  1. Wash, peel and boil the potatoes till they are soft.
  2. Mash the potatoes and place them in a large bowl.
  3. Add coriander leaves, mint leaves, green chili, salt, red chili powder and mix together. Check the seasonings and adjust accordingly. Keep aside.
  4. Prepare the batter by placing the gramflour (besan) in a bowl. Add red chili powder and baking soda. Add water till a thick batter is formed. Keep whisking to ensure that there are no lumps. Set aside.
  5. Place bread slices on a chopping board or flat surface.
  6. Take 2 to 3 tablespoons of the potato filling mixture and spread it on the bread slices. Slice it into triangle or rectangle slices.
  7. Heat oil for deep frying in a large wok.
  8. Take the halved potato sandwich, and dip it in the batter. Make sure that the sandwich is covered with the batter evenly.
  9. Fry the bread pakoras on a medium flame till they are crisp and golden brown.
  10. Serve hot with green chutney or ketchup.

Note: The stuffing for bread pakoras can be changed as per personal preference. Grated cheese or shredded chicken can be used, or even leftover alookabharta can be used as a stuffing.
