Recipe: Four snacks to celebrate the monsoon rain

So the sky has finally come crashing down on Karachiites, and what a great rainfall it was yesterday! If there is one thing which the people of Karachi love, it is the combination of rain with spicy snacks and tea.

Therefore, I have decided to share the recipes of four of my favorite snack items which I love to have during the monsoon rain. Hope you enjoy it!

Potatoes and rice cheese rolls

Ingredients

Boiled potatoes – 4 Boiled spaghettis – half a packet (in case you are using the custom-sized packets sold in general stores) Boiled rice – half a cup Boiled peas – half a cup Boiled shredded chicken – half a cup Bread crumbs Black pepper – according to taste White pepper – according to taste Red chili – according to taste Spring onion – cut in small portions Cabbage – cut in small portions Salt – according to taste Eggs Chinese salt Cheese slices

Instructions

1. Mash the boiled potatoes, spaghettis, boiled chicken and boiled rice together until they become a smooth mixture. 2. Add spring onion, peas and cabbage. 3. Add salt, red chili, Chinese salt, black and white pepper and mix it well with your hands. 4. Now take some mixture and put half cheese slice in it and give a shape of roll to the mixture. 5. Dip these cheese rolls in egg and coat them with bread crumbs. 6. Deep fry all these cheese-rolls and enjoy them with ketchup or with mint chutney.

Vegetable mix pakoras

Ingredients

Carrots Corn Mushrooms Spring onion Cabbage Potato Onion Green chilli Salt Red chili powder Chat masala Baking soda Cumin Wheat flour Water

Instructions

1. Cut all the vegetables in length (I-shape). 2. Add water in wheat flour and make a thin mixture from it. 3. Add baking soda in the mixture and leave it for two minutes. 4. Add all the vegetables in the mixture. 5. Add salt, red chili powder, cumin and chat masala in the mixture according to your taste and mix them well. 6. With the help of a spoon, put portion of the mixture in the hot oil and deep fry it in the low flame. 7. Enjoy vegetable mix pakoras with imli or mint chutney.

Onion rings

Ingredients

Onions (cut in the shape of rings) Bread crumbs Eggs Wheat flour Salt Baking soda Cumin Black pepper White pepper Red chili powder

Instructions

1. Make a smooth batter of wheat flour in one bowl and add baking soda in it. 2. Add all the spices in wheat flour and mix them well. 3. Dip onion rings in wheat flour. 4. Now dip these flour-coated rings in egg and coat them with bread crumbs. 5. Deep fry the onion rings and enjoy them with chutney of your choice.

Stuffed-cheese green chilies

Ingredients

Green chilies (large) Cabbage (cut in small pieces) Chicken (cut in small pieces) Cheese (cheddar and mozzarella) Spring onion Cumin Black pepper White pepper Chinese salt Vinegar Soya sauce Wheat flour Baking soda Bread crumbs Salt

Instructions

1. Put the chicken in a bowl and mix it with the spices according to your taste and leave it for some time. 2. In another bowl, make a mixture of wheat flour with water and add a pinch of baking soda in it. 3. In a pan, fry this chicken mixture for some time. 4. Add cabbage and spring onion in the chicken mixture and cook it for five minutes 5. Once it is cooked, put a cut in the middle of some green chilies and add this chicken filling in it. 6. After filling green chili with the chicken mixture, add some cheese (both) in it. (Don’t over-fill your chili; it should have enough room to be joined properly back together, even after the filling) 7. Now dip these filled chilies in wheat flour mixture and coat them with bread crumbs. 8. Deep fry or stir fry the stuffed chilies under low flame and enjoy them with chutney of your choice.

Bonus: Mint chutney

Add mint, garlic, salt, coriander and green chili in a bowl, and mix them yogurt. After the mixture is made, blend it to make it smoother and enjoy it with one or all of the snacks mentioned above.
