Potato, aka aloo (aka the best vegetable ever) is a weak spot for many of us. It may not be the healthiest vegetable to consume but it is one nonetheless, and we’re very particular with our vegetable intake. Here are some of the best yet basic recipes to satisfy your potato cravings.
Aloo ki bhujia
To eat with hot puris or kachori, this is a classic dish that everyone should know how to make. It’s great for Sunday breakfast or alongside dum ka keema for dinner.

Aloo ki katliyan
This is a weekly staple in most households, especially when you’re running low on supplies. You just need potatoes and some spices to pull this dish together.
Jacket potato
This can easily be eaten in place of a regular meal. Boil potatoes until they are cooked but not soft. Slice length-ways, and scoop out the flesh (keep the skin intact). Mash the scooped flesh with some butter; add shredded chicken, salt, pepper, cheese, oregano- anything you like. Fill the skins with this mixture, top off with extra cheese and bake until golden.
Aloo baingan (potatoes and eggplant)
Basic, basic, basic. You can cook this traditionally by adding diced potatoes and eggplant to an onion and tomato base and cook until tender (add your signature spices) or you can do it a slightly unhealthy way and fry sliced potatoes and eggplant until crispy and then add to a masala base. Yum.
Aloo kay pakoray (potato pakoras)
It is usually a Ramzan staple, but we won’t mind if they appear on the tea-trolley every now and then. Find the recipe here
Potato cutlets (aloo tikkiyan)
These are delicious and you can freeze them for later. One of our favorite ways to eat these cutlets is to place a couple in between 2 slices of bread and smother it with ketchup. Childhood, yum.
To make these: mash 4-5 boiled potatoes, add 1 finely diced onion, chopped coriander, 2 finely minced green chilies, 1 teaspoon red chili powder, 1 teaspoon salt, ½ teaspoon roasted and ground coriander seeds, ½ teaspoon dried pomegranate seeds, 1/4 teaspoon pepper. Mix this well. Shape round, flat patties, dip in beaten egg and then breadcrumbs. Shallow fry until crispy.
