Chicken Chow Mein is one of our favorite Chinese recipes. It’s a delicious one-dish meal with noodles, chicken, vegetables and flavored with oriental spices.
Ingredients:
For Noodles
- 450 grams egg noodles
- 2 tablespoons oil
- 2 teaspoons salt
For Chicken
- 300 grams boneless chicken, sliced
- 2 teaspoons soy sauce
- 1 teaspoon vinegar
- 1 teaspoon sesame oil
For Chow Mein
- 2 tablespoons oil
- 2 garlic cloves, chopped
- 2 carrots, sliced
- 2 capsicum, sliced
- 2 cups cabbage, sliced
- 2 tablespoons vinegar
- 2 teaspoons soya sauce
- 2 tablespoons oyster sauce
- 2 teaspoons salt
- Black pepper, to taste
- ¼ teaspoon red chili flakes
- Spring onions, for garnish
Method:
- Boil noodles as per packet instructions, making sure to add oil and salt to season the noodles. Drain well, and set aside.
- Place the sliced and boneless chicken in a bowl. Add soya sauce, vinegar and sesame oil. Set aside to marinate for at least 15 minutes.
- Heat oil in a large wok (must be large enough to accommodate noodles and vegetables).
- When the oil is hot enough, add garlic and saute for about 45 seconds – 1 minute. Add the boneless chicken and cook for a few minutes till color changes from pink to white.
- Add carrots, capsicum, cabbage and cook for a few minutes.
- Add the noodles and saute till heated through.
- Add soya sauce, oyster sauce, vinegar, salt, black pepper and red chili flakes. Mix together, and adjust the seasonings if required.
- Place the chowmein to a serving platter, and top with sliced green onions.
