Chicken Khowsuey

Khowsuey or khoasoay or khaosoi is a Burmese noodle dish that is popular in Pakistan, especially in the Memon and Gujrati community. It’s a one-dish meal comprising of noodles with chicken (or beef) with a curry made from coconut, yoghurt or gramflour and served with a variety of condiments that provide spice, tartness and crunch. This version is Chicken Khowsuey with a coconut & besan curry.

Ingredients:


For chicken:

  • 3 tablespoon oil
  • 1 teaspoon ginger garlic paste
  • 1 cup onion paste (1 medium onion, blended with little water)

 

  • 2 teaspoons red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon turmeric powder
  • ½ kg boneless chicken , cut in cubes

For curry:

  • 1 tablespoon oil
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon salt (adjust to taste)
  • 6 tablespoons gramflour (besan), roasted
  • 200 ml coconut milk or 1 sachet coconut milk powder, dissolved in water
  • 400 grams spaghetti, boiled

Condiments:

Note: Condiments can be added as per personal preference, so you can adjust quantity and variety as per your taste.

  • Green chilies, chopped
  • Garlic cloves, sliced and fried in oil
  • Coriander leaves, chopped
  • Onion, sliced and fried in oil
  • Red chili flakes
  • Spring onions, finely chopped
  • Boiled eggs, chopped
  • Lemon wedges
  • Crisps (Slims, Fried Papri or Noodles broken and fried)
