Chicken Shashlik

Chicken shashlik is a popular Pakistani oriental fusion dish which can be served on its own or with steamed rice. Boneless chicken is threaded on skewers along with colorful vegetables and then fried or grilled on a frying pan, grill pan or barbeque.

Ingredients:

For Chicken and Vegetable Mixture

  • 400 gram boneless chicken, cut into cubes
  • 2 tomatoes cut into cubes
  • 2 capsicum cut into cubes
  • 2 onions cut into cubes
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon red chili powder
  • ½ – 1 teaspoon salt
  • ½ teaspoon red chili flakes
  • 1 tablespoon oil
  • 2 tablespoon chili garlic sauce

For Shashlik Sauce

  • 1 tablespoon oil
  • 1 teaspoon ginger garlic paste
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon chili garlic sauce
  • 2 tablespoon ketchup
  • Salt, to taste
  • ½ teaspoon red chili powder
  • Red chili flakes, to taste
  • Rice, for serving

Method:

For Chicken and Vegetable Mixture

  1. Take a large glass bowl and add boneless chicken, onions, capsicum and tomatoes.
  2. Add ginger garlic paste, red chili powder, salt, red chili flakes, salt, oil and chili garlic sauce.
  3. Mix together and marinate for at least 30 minutes.
  4. Once the chicken and vegetables have been marinated, start threading them on wooden skewers.
  5. Put one chicken piece, followed by the vegetables and then another chicken piece. Keep alternating the vegetables to make a colorful chicken shashlik.
  6. Heat oil in a frying pan, grill pan or barbeque. Place the chicken shashlik skewers in the hot oil and cook till chicken is tender.
  7. Turn over with a tong, and make sure it is grilled on all sides. If necessary, add more oil to prevent the shashlik from burning.

For Shashlik Sauce

  1. Heat oil in a small sauce-pan or frying pan.
  2. Add ginger garlic paste, and saute for 30 seconds.
  3. Add soy sauce, vinegar, ketchup, chili garlic sauce, salt, red chili powder and red chili flakes.
  4. Cook for a minute while stirring. Once the sauce is thickened, take it off heat.
  5. Serve the chicken shashlik skewers with sauce and steamed rice.

Note: Other vegetables can also be used for chicken shashlik such as different colored capsicum, mushrooms or baby corn.
