Chicken Pasta in White Sauce

Macaroni. White Sauce. Chicken. All three things delicious on their own, but when combined together they make the most scrumptious chicken in white sauce pasta. Make it for dinner or serve it at your next ‘dawat’ to impress friends & family.

For White Sauce:

  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 ½ – 2 cups milk
  • Black pepper, to taste
  • 1 chicken cube
  • Salt, to taste
  • 1 teaspoon Italian herbs
  • ¼ teaspoon red chili flakes
  • ½ cup cheddar cheese

For Chicken

  • 2 tablespoons olive oil
  • 1 garlic clove, sliced
  • 300 gram boneless chicken, sliced
  • 1 can mushrooms, sliced
  • Salt, to taste
  • Black pepper, to taste
  • Italian herbs, to taste

For Pasta:

  • 500 gram macaroni or penne pasta
  • 1 teaspoon salt
  • 1 table spoon olive oil

For Macaroni:

  1. Bring water to boil in a large saucepan.
  2. Add salt and pasta to it.
  3. Boil till the pasta is tender (around 10 minutes) but not mushy. Drain and return to the saucepan.
  4. Add 1 tablespoon olive oil and mix, this will prevent pasta from sticking together. Set aside.

For White Sauce:

  1. Heat butter in a saucepan. Once butter is melted, add flour while stirring and cook for 1-2 minutes till the raw flavor disappears.
  2. Add milk, and keep whisking constantly to ensure that there are no lumps.
  3. Add chicken cube followed by spices (salt, black pepper, Italian herbs, red chili flakes).
  4. Lastly, add cheddar cheese and remove from heat.
  5. Whisk to ensure that the cheddar cheese melts.
  6. In case the sauce is too thick, add milk and stir again. Set aside.

For Chicken:

  1. Heat oil and add garlic. Saute till garlic is light brown.
  2. Add chicken and fry till color changes from pink to white.
  3. Add mushrooms, salt, black pepper and dry herbs. Stir till chicken is cooked through and tender.
  4. Add macaroni followed by white sauce. Mix together and serve hot.
  5. Garnish with more herbs, green chilies and red chili flakes.
